Recipe: Demeter’s Stuffed Peppers

1 Whole Sweet Pepper

2-3 oz. Ground Beef

1 Small Tomato

¼ c. Fresh Spinach

½ t. Minced Garlic

1 stalk Chopped Green Onions, Reserve the green part!

¼ t. Italian Seasoning

1T Feta 

¼ tsp Garlic/Onion Powder Blend

Dash Crushed Red Pepper

1T. Shredded Colby Jack

¼ c. Rice


  1. Pre-heat oven to 400 degrees and line a baking dish with parchment paper or foil. 
  2. In a skillet, lightly brown meat, seasonings, onions, and herbs.  After it is mostly cooked, add tomatoes and spinach only until spinach is wilted. Salt and Pepper to taste. 
  3. Remove from heat and stir in the Colby jack cheese and crushed red pepper (optional).
  4. Cut the top off a washed pepper and carefully scrape out the seeds and ribs. 
  5. Stuff the meat mixture into the cavity of the pepper and top with the feta cheese.
  6. Bake covered for 20-30 minutes. Remove cover for five additional minutes.
