Recipe: Mediterranean Sausage Bake

Ingredients

  • 1 Fully Cooked Italian Sausage Link, Sliced (Poultry)
  • 1/4 cup Onion Petals
  • 1/4 cup Large Chopped Sweet Peppers
  • 1/4 cup Zucchini or Other Green Vegetable
  • 1/4 cup Baby Bella Mushrooms cut in Quarters
  • 1 Small Tomato cut into Large Pieces
  • 1 tbsp. Olive Oil
  • 1/4 tsp. Smoked Paprika
  • 1/4 tsp. Garlic/Onion Powder
  • 1/4 tsp. Italian Seasoning
  • 1/8 tsp. Rosemary
  • 1/8 tsp. Oregano
  • 1/8 tsp. Thyme
  • Salt and Pepper to Taste
  • Dash Crushed Red Pepper (Optional)

Directions

  1. Preheat oven to 400 degrees. Prepare a sheet pan by lining with foil or parchment paper.
  2. Chop meat and vegetables to similar sizes. (Keep in mind that very dense items like potatoes need to be much smaller to cook all the way through.)
  3. Toss all items in a bowl with olive oil and all the seasonings coating everything evenly.
  4. Spread everything out onto the prepared pan. Make sure not to overcrowd the food.
  5. Roast for 20 minutes or until a fork goes into the potato easily.

You can always add or substitute other roasted vegetables such as parsnips, rutabaga, sweet potatoes, pumpkin, or brussell sprouts!
