Ingredients
- 1 Fully Cooked Italian Sausage Link, Sliced (Poultry)
- 1/4 cup Onion Petals
- 1/4 cup Large Chopped Sweet Peppers
- 1/4 cup Zucchini or Other Green Vegetable
- 1/4 cup Baby Bella Mushrooms cut in Quarters
- 1 Small Tomato cut into Large Pieces
- 1 tbsp. Olive Oil
- 1/4 tsp. Smoked Paprika
- 1/4 tsp. Garlic/Onion Powder
- 1/4 tsp. Italian Seasoning
- 1/8 tsp. Rosemary
- 1/8 tsp. Oregano
- 1/8 tsp. Thyme
- Salt and Pepper to Taste
- Dash Crushed Red Pepper (Optional)
Directions
- Preheat oven to 400 degrees. Prepare a sheet pan by lining with foil or parchment paper.
- Chop meat and vegetables to similar sizes. (Keep in mind that very dense items like potatoes need to be much smaller to cook all the way through.)
- Toss all items in a bowl with olive oil and all the seasonings coating everything evenly.
- Spread everything out onto the prepared pan. Make sure not to overcrowd the food.
- Roast for 20 minutes or until a fork goes into the potato easily.
You can always add or substitute other roasted vegetables such as parsnips, rutabaga, sweet potatoes, pumpkin, or brussell sprouts!
