Recipe: Rainbow Chicken

Ingredients

  • 2 oz. shredded Italian cheese
  • 1/2 chicken breast (trimmed)
  • 2 t. olive oil (divided)
  • Dash of turmeric
  • 1/8 t. smoked paprika
  • 1/8 t. garlic powder
  • 1/8 t. onion powder
  • 1/8 t. all-purpose seasoning or salt to taste
  • Rainbow veggies (ex. red onion, bell peppers: yellow, orange, red)

Directions

  • Pre-heat oven to 375°.
  • Slice chicken breast about ¾ through and ½ inch apart. Be careful to not slice all the way through.
  • Oil chicken breast with ½ the oil and season to taste.
  • Slice veggies thinly and stuff into sliced part of the chicken.
  • Bake for 15-20 minutes until cooked thoroughly.
  • Top with cheese and bake until melted.
